We dedicate this volume to the late Pauline (Pat) Ellsworth Sere who was an early member of the Society and a loyal supporter. She organized the Society s Museum Room in the Library and introduced many elementary students o Portland s past. Twenty years ago, she conceived the idea of a cookbook containing old and new Portland recipes, and that has inspired many of our contributors to offer ones in honor of friends and relatives. A quarter of this book represents recipes Pat collected. She was a lifelong resident of Portland and devoted to its interests.
